Easy peasie potatoes!

I make these as a quick, healthy snack when I'm home alone. Potatoes are so versatile. I love them! One of my favorite way to have them is in "wedge" form. While frying them does add a nice crisp, baking is always healthier!

All you need for this side dish/snack is a little vegetable oil, desired seasonings and a few potatoes.

I wash and then cut them into smaller wedges, toss in a little oil and sprinkle seasoned salt.. Place in the oven for 10 minutes and serve with honey mustard or barbecue.

Leaving the skins on adds a nice crisp texture but they're still soft in the middle. You can always cut them thinner or bake them longer for more of a crisp.

This is a great "base" to build on when serving a protein that needs a quick side add onions, zucchini, squash or peppers with salt, pepper and lemon juice.

On either a cookie sheet or in foil pockets This snack/meal makes a tasty, healthy, on-the-go-friendly Addition to your recipie book!
